SWELL Eats: Broccoli Slaw

Forth of July is just about here and I’m sure many of you will celebrate with a 4th of July BBQ or two. One of my fav things to bring to group events or barbeques is something that may sound kinda weird at first…Broccoli Slaw. Yes, I’m talking about cole slaw made with (gasp) broccoli! Now let me tell you, this not your grandma’s coleslaw, drenched in nasty mayo and who knows what! This slaw is much healthier and it’s so yummy that it doesn’t even taste like broccoli. Added bonus: This coleslaw is super quick to prepare and you can easily find all of the ingredients at most supermarkets. So go ahead, try this recipe, and impress all your friends with this yummy, healthy twist on coleslaw. Happy 4th! Here is how you make it:broccoli slaw 2

INGREDIENTS:
1 – 12 oz. Package of Broccoli Slaw
½ Raw Sunflower Seeds
¾ Raisins, Golden Raisins, and/or Dried Cranberries
¼ Cup Vegenaise or for favorite vegan mayo (you can also use plain, Greek yogurt)
3 Tbl. Apple Cider Vinegar
2 Tsp. Sugar
Juice of 1 Lime

DIRECTIONS:
1. Mix together broccoli slaw, sunflower seeds, and raisins in a large bowl.

2. In a separate mixing bowl, mix together Vegenaise, apple cider vinegar, sugar, and lime juice. Mix well.

3. Add dressing to the slaw and blend well.

4. Enjoy!!

Makes about 6 servings
