SWELL Eats: Broccoli Slaw

Forth of July is just about here and I’m sure many of you will celebrate with a 4th of July BBQ or two. One of my fav things to bring to group events or barbeques is something that may sound kinda weird at first…Broccoli Slaw. Yes, I’m talking about cole slaw made with (gasp) broccoli! Now let me tell you, this not your grandma’s coleslaw, drenched in nasty mayo and who knows what! This slaw is much healthier and it’s so yummy that it doesn’t even taste like broccoli. Added bonus: This coleslaw is super quick to prepare and you can easily find all of the ingredients at most supermarkets. Summer is finally here meaning longer days and warmer weather! I don’t know about you, but summer is also a time when life gets a little more busy and active. When I have a busy week ahead of me, I like to have healthy snacks on hand because let’s face it, no one wants to be around someone with the hunger grumps! One of my favorite snacks to make is homemade energy balls. This delicious raw snack is made with dates, cashews, dried fruit, and coconut. Sounds easy enough, right?
