I believe that being healthy is not just about being in good shape physically but also being healthy in mind and spirit. I think that all three elements are essential to living a happy and harmonious life. It can be challenging to find the time and the energy when we are leading hectic stressful lives, but if you can make a commitment to put your health first everything else kind of falls into place. Eating right and getting exercise are the logical first steps because they directly effect your energy level, mood, and strength. These are essentials that lead to a clear mind, which in turn opens up possibilities. Possibilities are what our spirits feed on- that’s why we feel euphoric when it seems like anything is possible!

FAVORITE QUICK + HEALTHY RECIPE:
One of my favorites is seared tuna, either over sticky rice or a mixed green salad.

Seared Tuna Bowl:
-Sushi grade ahi tuna
-Rice (my favorite is Lotus Foods Jade Pearl Rice)
-Fresh Spinach
-Crushed Garlic
-Avocado
-Green onion
-Cajun seasoning

Remove the tuna from the fridge and rub the outside with Cajun seasoning. Since the the middle is still raw, make sure you get a sushi grade cut. Let it sit out on the counter while you prep, or for 10-15 minutes (you want to avoid having a seared piece of fish still cold in the middle).
Start your rice.
The key to searing is having a good skillet and getting it nice and hot before adding the fish. I use a Scanpan grill pan, but iron skillets work great too. The cooking time depends on the thickness of the fish, but a typical cut on med-high heat only needs a about 2 minutes on each side. You can lightly sauté your spinach in a little olive oil and the garlic in a separate pan.

Add spinach to your rice, and serve tuna on top. Garnish with diced avocado and green onions.

Seared Tuna Salad:
If you prefer it over salad, make a mixed green salad, add avocado, seared tuna, and toasted pine nuts. Make your own dressing by mixing olive oil (first cold pressed), a splash of balsamic vinegar, a splash of gluten free soy sauce, some finely diced fresh pineapple, minced garlic, fresh grated ginger, and black pepper.

FAVORITE WAY TO STAY FIT:
I have been taking Pilates for about six months and I truly enjoy it because every class is different and challenging. They add circuit training to some of the Pilates classes, which is a more fast paced cardio workout. I also like being outdoors as much as possible, whether is it a couple mile hike, running on the beach, swimming, or paddle boarding in the ocean. I love being surrounded by nature!
