SWELL Eats: One Ingredient Pineapple Sorbet

Keep it sweet and simple with this single ingredient recipe for pineapple sorbet.
You have most-likely heard (and hopefully tried) one-ingredient banana ice cream. We love the simplicity of it so much, that we went ahead and tested it out with a few other tropical flavors, the winner being…you guessed it, pineapple. Although, papaya and mango were closer runner-ups. Eat it alone for a refreshing treat or use it to top sliced fruit or to lighten up your favorite dessert.

START WITH:
– Frozen Pineapple Pieces
– Blender, Food Processor or Masticating Juicer
– Optional: coconut milk and/or coconut flakes

RECIPE:
Place the frozen pineapple chunks in the food processor, blender or  juicer and blend until smooth (a few minutes). Done. Really, done. It’s that simple. You’ll end up with cornmeal-textured pineapple that forms a ball when pressed together. Think tropical snowball.

THE EXTRAS:
Like a creamier texture? Add coconut milk to the mix.
Want some crunch? Sprinkle on toasted coconut flakes.
